Food Follow Up: 10/24 Menu
Spinach lasagna rolls - Let me preface this by saying I unskinnied this completely. Reduced fat cheese is awful and I won’t tolerate it. It was really good, really easy (much less fussy than stacked lasagna somehow), a definite repeat. I doubled the ricotta because we had more that needed using, used jarred marinara bc I felt like tomato sauce would’ve been bland, also grated in a couple of garlic cloves and added a pinch of nutmeg. Nutmeg + spinach = magic, I can’t explain it.
Cheesy meatloaf - Admittedly a lot of work, but leftovers for days and you forget about your chopping calluses once you take a bite. There are lots of meatloaf recipes out there…this one is the king.
Turkey chipotle chili with apples and cheddar - Perfect autumn comfort food. I used a can of pinto beans instead of the second pound of meat and skipped the raw apple topping. Really good, rich flavor and only took a half hour.
