Thai beef with chiles and basil over coconut rice: Thank you to both jesus and Carolyn, this is so simple, quick, and delicious. Do not skip the coconut rice. One thing - Martha seems to think this makes 6 servings. HA. HA HA HA.
Chorizo, butternut squash, and zucchini chili: I’m struggling with whether to recommend this…it was really, really tasty but also really, really labor intensive. Way too many components to prep, which means too many dirty dishes at the end of the night. I might throw together a more streamlined version of this in the future because it was good. I think you can skip the meat altogether, Micah thinks the meat was the best part (ugh of course he does).
Rigatoni with goat cheese: A good flexible base recipe, add in whatever strikes your fancy and/or needs to get out of your fridge. I used up some chicken sausage, kalamata olives, and chopped tarragon.
